Dr. Meihong Xu is an Associate Researcher and Doctoral Supervisor at the School of Public Health, Peking University.

She obtained her Doctor of Medicine degree from the Department of Nutrition and Food Hygiene at Peking University in 2013 and has remained at the university to teach after graduation. Her main research areas include nutrition and health in the elderly, nitrogen source nutrition (such as bioactive peptides and nucleotides), bioactive substances in foods, anti-aging, and food toxicology.

Dr. Xu has presided over more than 10 national and international research projects, including those funded by the National Natural Science Foundation of China, the Beijing Natural Science Foundation, the Danone Nutrition Education Fund, and the Food Science and Technology Fund Project of the Chinese Institute of Food Science and Technology. As a key member or main researcher, she has participated in major national initiatives such as the National Key Research and Development Program, the National Science and Technology Innovation 2030, and projects during the 12th and 13th Five-Year Plans in China.

She has published more than 80 academic papers, with over 50 as first author or corresponding author. Dr. Xu has edited several books, including Geriatric Nutrition, Nucleotide Nutrition (First and Second Editions), and A Chat about Nucleotides. As deputy editor, she has contributed to books such as Nutrition of Fish Collagen Peptides, Nutrition of Walnut Peptides, Nutrition of Ginseng Peptides, and Nutrition of Oats. She has also participated in editing Peptide Clinical Nutrition and Nutritional Support for Surgical Diseases, among others, and serves as a reviewer for multiple academic journals. In 2019, she received the Third Prize of the Hainan Provincial Science and Technology Award (as the fourth contributor).

Dr. Xu has developed and taught undergraduate courses such as Nutrition and Aging and Peptide Nutrition and Health, as well as postgraduate courses like Peptide Nutrition and Geriatric Nutrition.

She concurrently serves as the Secretary-General of the Health Technology Committee of the Chinese Geriatrics Society, a council member of the China Association of Maternal and Child Health Promotion, and Executive Director of the Maternal and Infant Nutrition Special Committee. She is also a council member and Office Director of the Beijing Nutrition Society, a member of the Basic Nutrition Branch and Nutrition and Neuroscience Branch of the Chinese Nutrition Society, a member of the Asia-Pacific Alliance for Obesity and Sarcopenia Metabolism, and a member of the School Health Branch and Nutrition Monitoring and Evaluation Branch of the Chinese Association for Student Nutrition and Health Promotion.
